DESCRIPTION
Our Brut Sparkling Wine is a blend of 85% Chenin Blanc, 10% Pinot Noir, and 5% Chardonnay. This sparkling wine is crisp and clean, with rich, toasty fruit aromas and clean citrusy flavors, with an abundance of effervescence and showy mousse.

WINEMAKING NOTES
Carter Creek sparkling wines are made in the process called the Charmat, or "Tank Method." In this process, our base wine is reinoculated for a secondary fermentation which occurs in a stainless steel tank. In this process, carbon dioxide is created as a biproduct of the yeast consuming sugar, which creates the sparkle. It is whole cluster pressed and stainless steel fermented for primary and secondary fermentation. It is finished at 1.0g/100mL residual sugar.
