2017 Cabernet Sauvignon
DESCRIPTION
Rich, complex and full of varietal character, this is a great Cabernet Sauvignon with superb depth and intensity.
WINEMAKING NOTES
Our reds are harvested, crushed, and cold soaked for 3-4 days. After that, they are inoculated with their specific yeast strain depending on varietal and stylistic choice. We will perform 2 daily pump-overs and delestage on days 6, 7, and 8. They will be pressed out around day 18. Then they age in barrels for around 24 months in French Oak before bottling.
VINEYARD NOTES
Sagmore Vineyards - Planted by Jon McPherson's father, Doc McPherson, in the late 80's. This Cabernet is ade from 30+ year old vines.
